Head/Lead Distiller – Founding Team Member

Location: Bali, Indonesia

About Us

We currently operate a medium-scale production brewery, the largest currently in Bali. One of the next steps in our mission. Is to create a spirits brand that will play a pivotal role in influencing the Islands booming F&B scene in the future. As a founding team member, you’ll play a pivotal role in shaping our products and brand identity.

The Opportunity

We are seeking an experienced, hands-on Head/Lead Distiller to commission, develop and operate our distillation program from the ground up. This is a rare opportunity to leave your mark on a new brand. Lead production strategy, recipe development, compliance, and quality systems from day one.

Key Responsibilities

Production & Operations

• Design and oversee all distillation processes from raw materials to packaging.
• Assist in plans to scale production.
• Troubleshoot maintenance and engineering problems.
• Develop SOPs and ensure efficient, safe daily operations
• Manage production schedules and inventory planning

Product Development

• Lead formulation and recipe development across core and seasonal expressions
• Conduct sensory analysis and quality control
• Collaborate with founders on brand positioning and portfolio strategy

Compliance & Safety

• Ensure full regulatory compliance
• Maintain accurate production records and reporting
• Implement safety standards and training protocols

Team & Leadership

• Hire, train, and mentor production staff as the business scales
• Foster a culture of craftsmanship, accountability, and innovation

Qualifications

Required:

• 3+ years distillation experience (craft or commercial scale)
• Proven track record of spirit development and production management
• Deep understanding of fermentation science and distillation techniques
• Knowledge of regulatory and safety requirements
• Strong problem-solving and equipment troubleshooting skills

Preferred:

• Experience launching or scaling a distillery
• Formal training in brewing, distilling, food science, or related field
• Entrepreneurial mindset and start-up adaptability
• Sense of adventure, and desire to live in SE Asia.
• Comfort on two wheels is very helpful, as most of us drive scooters to work.
