- Establish and manage central kitchen operations to support consistent quality, efficiency, and scalability across outlets.
- Drive menu innovation while maintaining profitability through strict food cost control and accurate COGS reporting.
- Collaborate with management and cross-functional teams to align culinary excellence with business growth.
Key Responsibilities- Menu Development & Innovation
- Develop, test, and standardize recipes tailored to our concept.
- Create seasonal menus, specials, and promotions that are relevant and trend-conscious.
- Conduct competitor analysis to benchmark flavor, presentation, and pricing.
- Central Kitchen Setup & Management
- Lead the design, setup, and optimization of central kitchen for streamlined production and supply to outlets.
- Establish SOPs for bulk preparation, storage, packaging, and distribution.
- Ensure consistency of taste, quality, and presentation across all outlets through central production.
- Cost Control & Reporting
- Monitor and control food costs, yield, and portioning to achieve target margins.
- Track and report detailed COGS on a weekly and monthly basis to management.
- Implement systems to minimize waste, pilferage, and inefficiencies.
- Collaborate with Finance/Operations to align kitchen performance with P&L targets.
- Operational Excellence
- Oversee daily kitchen operations, ensuring smooth service flow.
- Maintain the highest standards of hygiene, food safety, and equipment care.
- Conduct regular audits of kitchen and central kitchen processes.
- Team Leadership & Development
- Recruit, mentor, and train kitchen staff across both outlet and central kitchen teams.
- Build strong discipline and teamwork culture, ensuring staff follow SOPs.
- Plan staff schedules and oversee career development through training.
- Cross-Functional Collaboration
- Work closely with Operations, Marketing, and Management on menu launches, campaigns, and quality control.
- Present food tastings for stakeholders and ensure smooth roll-outs of new dishes.
- Quality & Guest Experience
- Guarantee that every plate delivered to guests meets our standards of flavor, texture, and presentation.
- Address and resolve guest feedback on food quality.
- Strive for continuous improvement and elevate the overall dining experience.
Job Qualifications- Culinary degree/diploma or equivalent professional training; food safety certification (HACCP/ISO/local equivalent) required.
- At least 3-5 years of progressive kitchen experience, with 2+ years in a leadership role (Sous Chef or above) in a restaurant or hospitality group.
- Proven expertise in setting up and managing central kitchens, recipe standardization, and scaling production.
- Strong knowledge of Indonesian and international cuisine, with creativity in menu development.
- In-depth understanding of COGS reporting, food cost management, and P&L impact.
- Skilled in supplier management, purchasing, inventory control, and waste reduction.
- Demonstrated leadership abilities in training and managing both outlet and central kitchen teams.
- Proficiency in basic office software, POS/back-office systems, and reporting tools.
- Excellent communication skills in Bahasa Indonesia; English proficiency is a plus.
- Professional appearance, high stamina, and ability to work flexible schedules including weekends and holidays.
- Adaptable, detail-oriented, and aligned with our values of quality, authenticity, and hospitality.
- Working Experience in Bali/ Jakarta is preferred
