Hotel Overview

Situated in Senayan Square at the South end of Jakarta s Central Business District, Fairmont Jakarta will feature 380 spacious guestrooms and 108 Fairmont branded suites. Additional features and amenities to the urban hotel include a number of lounges and several restaurants featuring a variety of culinary offerings. For corporate events and local galas, the hotel features 3,500 square meters of function space, including a 1,200 square-meter ballroom.

Executive Pastry Chef

Executive pastry chef is responsible for the production of all pastries, desserts, breads and other baked products. This position gives operational support to the Executive Chef / Director of Culinary in meeting all divisional targets and objectives with a view to maximize guest satisfaction as well as protecting all assets of the property. In addition to overseeing dessert preparation, executive pastry chefs may handle tasks such as supervising employees, ordering supplies, creating budgets and adhering to sanitation regulations.

Employment will be under local contract.

What you will be doing:

• Maintain and enhance the food products through creative menu development and presentation.
• Liaise daily with the Outlet Managers to keep open lines ofmunication regarding guest feedback.
• Make sure our products are consistent at all the time
• Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the customers on a daily basis.
• Creates decorative food displays.
• Maintains purchasing, receiving and food storage standards.
• Ensurespliance with food handling and sanitation standards.
• Performs all duties of kitchen managers and colleagues as necessary.
• Recognizes superior quality products, presentations and flavor.
• Keep the consistence all product everyday.

Your experience and skills include:

• Possesses several years of experience in the industry.
• Has formal culinary training through associate s or bachelor s degree programs in pastry arts.
• Good understanding of food cost, how to calculate and manage
• Good understanding of menu engineering, how to read, action and apply to menu writing
• Quality management and quality control
• Computer literate in Microsoft Window applications an asset
• Must have relevant written/spoken language ability in English and Bahasa
• Strong interpersonal and problem solving abilities
